Choosing the Right Cheese for Your Pizza Menu

Cheese is the single biggest decision on a pizza menu. It decides how the pizza stretches, browns and tastes, and it is also one of the largest items on your cost sheet. Before you place a bulk order, it helps to understand what each type of cheese does.

Mozzarella: the stretch and the pull

Mozzarella is the classic pizza cheese because it melts evenly, stretches well and has a mild, milky flavour that lets the sauce and toppings shine. Shredded mozzarella is the easiest to use on a busy line because it needs no cutting and spreads quickly.

Pizza blends: balance of cost and performance

A pizza blend combines mozzarella with other cheeses. Blends are popular with high-volume outlets because they aim to keep good melt and browning at a more manageable cost per kilo. Ask for a sample and bake it on your own dough and oven before committing to a large quantity.

Cheddar and specialty cheeses

Cheddar adds colour and a sharper taste. It works well as a partner to mozzarella on loaded pizzas, in burgers, in sandwiches and in baked pasta. Monterey Jack and Colby are milder options that melt smoothly.

A quick checklist before you buy

  • Bake a test pizza with each option on your actual dough, at your usual oven temperature.
  • Check how the cheese looks after 10 minutes under a hot lamp, not just fresh from the oven.
  • Compare pack sizes and shelf life against how fast you actually use cheese.
  • Confirm cold storage space before ordering in bulk.
